"rubio" veggie burrito

I enjoyed myself a delicious Veggie Burrito from Rubio's the other night and so I just had to come up with a way to do it for myself at home so that I do not break the bank over there since they just opened up right by my house.

I'm amazed with the stuff that we can make in our own homes and I like to discover those things as much as possible.


One green one and the red one are vegetarian (only because I used shredded cheese a little on the inside and on top) and the other one is my vegan yummy :)


"rubio" veggie burrito

- 2 portabella mushrooms
- 1 box of Zatarain's Dirty Rice Mix
- 2 medium squash, chopped small
- 2 medium zucchini, chopped small
- 1 can of black beans
- 2 T cooking sherry
- 2 T safflower oil
- burrito sized tortillas
- guacamole (homemade of store-bought)
- burrito sauce: Red or Green

- Cook Dirty Rice Mix per package directions while you chop the squash, zucchini, and portabella mushrooms. Before the rice is done, throw all the squash and zucchini in with it mixing well.

- In a wok or large frying pan, heat your vegetable oil. Once heated, throw in your chopped mushrooms and cooking sherry if using.

- Get out your tortilla, place a few scoops of black beans to one side of the tortilla with desired amount of red or green sauce. Place in the microwave for no longer than a minute.

- Scoop a generous amount of the rice mixture and fried mushrooms on top. Roll up your burrito tucking in both sides as you go along.

- Drench or drizzle the top of your burrito with desired sauce. Dollop a bit of guacamo on top and then add a couple sliced olives for garnish.
