I just have to say that this orange chick'n-less meal is by far my favorite dish. Maybe it's because I have been craving Asian inspired dishes so often lately. Maybe it is because I have had Mexican take-out a little too much recently. Regardless, It was so subtly spicy with a strong taste of orange and just knowing how completely healthy it is always makes a meal that much more appealing.
...And to think I have always had such a hard time with tofu. Honestly, there is NO need to fear tofu. It is amazing so long as it is cooked correctly. I would have used brown rice instead of white for healthful reasons, but I got to use up what I have. And man! I have a lot of white rice that needs to get eaten before I go buying new rice. It's about resourcefulness, m'kay?
